The production of tofu, how to produce Tofu yourself is described in this recipe.

The advantage of self-production of tofu is that you exactly know what ingredients were used.

  • Ingredient List:

  • 500g white soya beans
  • Water
  • Nigari

The 500g soybean wash well and soak for about 12 hours in water. Then pour the beans in a sieve and wash again with water and rinse well.

Now the beans are pureed in a blender and, simultaneously, water is added in the ratio about 1:1, that means same amount of beans, same amount of water.

In the meantime, about 3 liters of water are poured in a large saucepan, add the pureed beans, mix well and cook gently about 20 minutes.

Now the soybean material is pressed through a sieve, designed with a fine cloth and then poured into a separate saucepan.

In the sieve remains the so-called okara, which is a by-product of soy milk production – Approx. 4% from okara is protein.

This okara is now poured in an extra pan, where it is boiled with the help of about 1 liter of water, strained again and pressed out again.

This now obtained soybean milk is now mixed with the soy milk from the first pressing. The soy milk is then mixed with nigari (magnesium chloride).

It takes about 2 teaspoons nigari that is dissolved in about 100ml water. Then the nigari is mixed with the 80 ° Celsius heated soy milk and now the whole thing is allowed to rest for about 20 minutes.

As soon as cheese and whey have separated, the cheese is poured in a suitable container and there it is pressed with a weight by using eg. a mull, until the tofu has a good strength.

The Tofu can be refrigerated, but it must lie in the water and must be covered. You should also change the water daily. Thus, the Tofu can be easily stored for a week.

Tofu Own Creation

Tofu Own Creation is a very simple Tofu Recipe by sui generis. For this recipe you should definitely use Firm Tofu.

In addition, the tofu should be first cut into about 1-1.5cm thick pieces.

Depending on your appetite and amount you can buy firm tofu packed in 200 or 400g units.

For the soy sauce, you should use organic tamari, also the Ume Su is available in health food store.

  • Ingredient List:

  • 200 to 400g firm Tofu
  • 1 to 2 tablespoons canola oil
  • 1 to 2 tablespoons soy sauce
  • Ume Su

First, cut the firm tofu in about 1 to 1.5cm thick pieces. Pour about 1 to 2 tablespoons canola oil or other vegetable oil in a saucepan and cook over high heat.

Then put the cut tofu pieces in the pan and spread with the oil.

Once the tofu pieces are roasted on one side brown, turn once and fry on the other side.

Then turn the temperature back and now add the 1 to 2 tablespoons soy sauce, turn over the tofu pieces several times so that everything is well mixed.

With further repeated turning fry the tofu pieces completed until they have a “light” brown color.

At the end take away the pan from the heat and pour some Ume Su on the tofu pieces to improve the taste and mix it in the pan. Ready is the tofu own creation!

Ume Su is a fermented seasoning from Japanese Ume fruit (plums). To Ume Su, there are no further details available yet.

Seitan with Tofu

Seitan with Tofu is a special recipe for athletes and anyone who wants to set value on Higher Protein Content in their nutritional.

Important for this recipe is to use Firm Tofu, rather than silken tofu.

Seitan can be bought at health food store, there you can found it seasoned and unseasoned. Depending on your taste, you can use both variations for this recipe.

  • Ingredient List:

  • 200 to 400g firm Tofu
  • 250 to 500g Seitan
  • 1 to 2 tablespoons canola oil
  • 1 to 2 tablespoons soy sauce
  • Ume Su or mirin

First, cut the tofu in 1 to 1.5cm thick pieces. Then, put 1 to 2 tablespoons canola oil or other vegetable oil in a pan.

Spread and heat in the frying pan. Then put the cut tofu and seitan into the pan and pour some soy sauce on it (to taste).

Fry the tofu as long as it has taken a nice light brown color.

In the end, you can still pour some Ume Su or mirin on the seitan and tofu pieces and serve.
