Tofu with Egg

Tofu with Egg is a relatively simple Japanese Dish ,but it tastes very versatile, depending on which type of dressing is used.

In this recipe it is again very important to use soft tofu, or named Silken Tofu.

The water of the tofu needs to be removed completely, then drain well. tofu-ei

  • Ingredient List:

  • 200 to 600g silken tofu
  • Fish flakes
  • 1 to 2 tablespoons mirin
  • Soy sauce
  • Sake
  • Eggs
  • Onions

First, again put away the water from the tofu and drain the tofu thoroughly.

The soy sauce, sake, mirin and fish flakes heat in a saucepan, cool and drain.

This mixture is the dressing. Cut the tofu into pieces and give each piece into a small bowl.

Then each of the tofu gets a cavity (eg: with a spoon) and in each
of this cavity comes a previously soft-boiled egg.

The previously removed tofu is simply given in a bowl. Over this tofu, are scattered the previously chopped onions and if you like, you can still decorate with some chopped ginger.

At the end the dressing is poured over the tofu and finished is the tofu with egg!
